By definition, cookies are a dessert which means they generally contain some sugar. There are creative cookie recipes out there that use a non-traditional sweeteners such as banana, but that type of substitute won’t work for this particular recipe.
But, the main swaps we make for this healthy peanut butter and jelly cookie recipe are using maple syrup instead of white or brown sugar, and almond flour instead of all purpose flour. While these healthy cookies are not low in sugar, maple syrup overall is better for your blood sugar.

So, how do you make these healthy peanut butter and jelly cookies?

Make the cookie dough: In a medium bowl, mix together the almond flour, maple syrup, vanilla extract, melted coconut oil, and a pinch of salt until a dough forms. Stir until all the ingredients are well combined.
Shape and bake the cookies: Shape the dough into five equal-sized balls and place them on the prepared baking sheet, leaving about 1 inch of space between each ball. Flatten the balls into discs using your fingers or the back of a spoon. Bake the cookies in the preheated oven for about 10 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool completely on the baking sheet.
Add jelly to the cookies: Once the cookies are fully cooled, spread an even layer of jelly on top of each cookie using a spoon or a knife. You can use your favorite vegan jelly or jam for this step, such as grape or strawberry.
Add peanut butter to the cookies: In a small bowl, mix together the creamy peanut butter with maple syrup and melted coconut oil (if using) until well combined. Alternatively, you can use plain peanut butter without adding any additional ingredients. Spread an even layer of peanut butter on top of the jelly layer.
Melt and add chocolate: In a microwave-safe bowl, combine the dairy-free chocolate chips and coconut oil. Microwave the bowl in 15-second intervals, stirring after each interval, until the chocolate is fully melted and smooth. Be careful not to overheat the chocolate. Once melted, spread an even layer of the chocolate on top of the peanut butter layer.
Freeze and enjoy: Place the cookies in the freezer for about 1 hour to allow the chocolate to set. Once the chocolate is firm, you can remove the cookies from the freezer and enjoy these delicious vegan peanut butter and jelly cookies! Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Ingredients
- 1 c almond flour
- 3 tbsp maple syrup
- 1/2 tsp vanilla
- 2 tbsp coconut oil, melted
- pinch of salt
- 1/4 c jelly
- 1/4 c peanut butter or almond butter
- optional: 1 tbsp maple syrup
- optional: 1 tbsp coconut oil
- 1 c chocolate chips
- 1 tbsp coconut oil
Instructions
- Preheat oven to 350 F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, mix together the almond flour, maple syrup, vanilla, melted coconut oil, and salt until a dough forms.
- Shape the dough into five balls, and place them on a backing sheet, leaving 1" between each ball. Flatten the balls into a disc.
- Bake for about 10 minutes, until lightly golden on the edges. Cool completely.
- Spread an even layer of jelly on top of each cooled cookie.
- If using the maple syrup and coconut oil, mix them together with the peanut butter in a small bowl. Otherwise, just use the peanut butter by itself.
- Spread an even layer of the peanut butter on top of the jelly.
- Place the chocolate chips and coconut oil together in a microwave-safe bowl, and microwave at 15s intervals, stopping to stir each time, until the chocolate is fully melted.
- Spread an even layer of the chocolate on top of the peanut butter.
- Freeze the cookies for about one hour, and enjoy!
