Buffalo Chickpea Toast
Buffalo chickpea toast makes a great vegan lunch or snack with lots of protein!
Oh, chickpeas, what can’t you? Chickpeas are a staple in many vegan diets because they are a great source of protein and fiber. Chickpeas are also endlessly adaptable in that they can be added into so many recipes, and even desserts (yup, chocolate chip chickpea blondies are totally a thing and they are totally delicious). This buffalo chickpea toast recipe is a great snack or lunch that’s full of flavor, protein, and fiber. Both vegans and non-vegans love it!
This easy vegan snack takes about 10 minutes to make - really! I find myself making this buffalo chickpea toast on those days that I’m hungry for a snack but don’t have time (or energy) to turn on the stove and make something on the spot. This recipe really couldn’t get any quicker or easier! All you’re really doing is mashing chickpeas together with a bit of onion, tahini, and spices. Buffalo sauce, obvi, is a key component of this vegan recipe. Do note though that some store-bought buffalo sauces contain butter, so if you are a vegan be sure to read the ingredients label carefully to check if butter is listed.
Tahini is another key ingredient for this buffalo chickpea toast recipe. Think of it as our replacement for mayonnaise, which is traditionally used in tuna salad and chicken salad recipes. Tahini has become a favorite ingredient of mine lately. Just like chickpeas, tahini can be used in so many things! It can serve as a replacement for butter in cookie recipes, and it’s also used in my cauliflower chickpea wrap recipe. You can typically find tahini near the peanut butter section of your grocery store.
Once the buffalo chickpea salad is made, spread it across a piece of toasted bread, and dig in! I like to make this as a quick lunch, and because of the protein in the chickpeas I know it will keep me full for hours.

How do I make this buffalo chickpea toast?
It’s easy! Yes, really easy. All you need for this recipe is:
Chickpeas: straight from the can. Drain the chickpeas, but do not rinse them.
Onion: adds a bit of crunch, which balances nicely with the soft chickpeas.
Tahini: for creaminess.
Buffalo sauce: for flavor (you can’t make buffalo chickpea toast without it)!
Toast: I recommend a slice of sourdough bread.
Garlic powder, salt, and pepper: for taste.

Ingredients
15 oz can of chickpeas, drained
1/4 of an onion, diced
2-3 tbsp tahini
2 tbsp buffalo sauce
1/2 tsp garlic powder
pinches of salt and pepper, to taste
2 slices of sourdough bread, toasted
Directions
Add the chickpeas to a medium bowl, and use a fork to mash them into a thick paste. You may notice the skins of the chickpeas start to come off, and that’s ok. Just keep mashing!
Add the diced onion, tahini, and buffalo sauce, and mix again.
Season the buffalo chickpea salad with garlic powder, salt, and pepper. Add a bit more buffalo sauce or seasoning, to taste.
Spread the buffalo chickpea salad across both slices of toast. Slice, and serve!
