Pound cake is a dense, buttery cake that tastes amazing on its own or with some whipped cream, or ice cream! Pound cake also makes a great base for strawberry shortcake.
This peach pound cake recipe is a vegan twist on a classic dessert. The addition of chopped, fresh peaches takes this pound cake recipe to a whole new level!

What other fruits could I use?
I love added chopped peaches to this vegan pound cake, but you could add any fruit that you’d like! I’d recommend trying apples, berries, or pears.
How do you add fruit to pound cake?
First, wash and peel your peaches and dice them into small pieces. Toss the chopped peaches into a bit of flour so that they don’t sink to the bottom of the cake when it bakes (this works because the flour absorbs the outer moisture on the fruit).
Spread a thin layer of batter in the bottom of your loaf pan and top with 1/3 of the chopped peaches. Repeat these steps two more times so that you have layers of batter and peaches throughout. Top the pound cake with a few thin slices of peaches, if desired.
How long does pound cake last?
Because this pound cake contains fruit I recommend storing it in the fridge, wrapped, so that the fruit does not spoil. This cake will keep in the fridge for about 5 days.
Peach Pound Cake
Ingredients
- 3 peaches, peeled and diced
- ½ c vegan butter, softened
- 1 c coconut sugar
- 2 c flour
- 3 tsp baking powder
- 1 c non-dairy milk
- 1 tsp apple cider vinegar
- 1 tsp vanilla
Instructions
- Preheat oven to 350 F. Line a loaf pan with parchment paper and set aside.
- Mix the non-dairy milk and apple cider vinegar together in a small bowl. Set aside.
- Mix the flour and baking powder together in a separate small bowl.
- In the bowl of a stand mixer, beat the softened butter and coconut sugar together until it's fluffy. Mix in the vanilla.
- Now, add in the flour and milk-vinegar mixture in alternating increments, mixing the batter together just until combined.
- Spread 1/3 of the cake batter into the bottom of the loaf pan. Top with 1/3 of the diced peaches, scattering it evenly. Repeat two more times, until you have three total layers, ending with the cake batter on top.
- Bake for about 1 hour, until a toothpick inserted in the middle comes out clean.
